Here is how to make oat, blueberry and Greek yoghurt pancakes-
Serves 2
Ingredients~
3/4 cup of Oats
1/2 cup of Greek/plain yoghurt
1/3 cup( allow more for serving)
Frozen/fresh blueberries
1 egg
1/2 teaspoon of baking powder
1/2 a ripe banana
1/2 teaspoon vanilla extract
I also usually eat mine with golden syrup and strawberries but that's optional.
(The measurements above are what I used but they may not be perfect quantities for you ,just add more or less if you feel you need to)
Method
I used a food processor to mix all my ingredients up ,but you could mix by hand if you don't have one.
Firstly place all your ingredients apart from the blueberries in your blender and blend them until smooth- which will take around two minutes.
Once smooth the mixture is quite runny so I would recommend leaving it to thicken up for 5-10 minutes before cooking .
Next stir in the blueberries just by using a spoon.
Once they are all mixed in grab a frying pan and heat up some oil or butter in it, then place a dollop of mixture in it and cook. How much you use will depend on how big you want your pancakes to be.
Cook on each side until golden brown and make sure they are cooked all the way through.
Keep using a spatula to lift up the sides of the pancake while cooking to stop the risk of it sticking.This mixture does appear quite runny when you first use it but once cooked it makes the perfect pancakes.
Once cooked serve and enjoy-they taste amazing served with golden syrup and fruit!
